It has been a long break since the last recipe posted on this blog. Most of the latest activities were on Instagram, so very happy to post this outstanding recipe.
Here in Finland, we are eagerly wait for our own grown ones, to be able to taste the taste of summer.

It is soft, it is moist, a bit of crunchiness, sourness, sweet and really unbeatable.

Use fo this recipe measurements a 22 round pie plate.
Maippi used an oven tray and cut it to squares.

Ingredients
- 1.5dl (150ml) sugar
- 3dl (300ml) flour
- 125gr soft butter
- 1 egg
- 1tsp baking powder
- 1tsp vanilla sugar
- 1.75dl (175ml) milk
- 5dl sliced rhubarb stems

Instructions
Mix sugar, flour & soft butter together.
Take 1.5dl of the mix and put aside.
Add I egg, baking powder, vanilla sugar.
Slowly add the milk while mixing until the dough is firmed.
Pure into a round 22 buttered pie plate and spread the rhubarb pieces on top.
Spread the remaining dough crumble on top.

Bake in 225°C on the lowest level for 20-25 min.
If you use an oven tray, use a baking paper.
Serve with vanilla ice cream, vanilla sauce or any of your favourite ice cream .
