A simple recipe that already a few people asked me to post and has good childhood memories for me.
It is great for weekend breakfast, kids love it.
Actually it is a way to push more vegetables to the kids menu and use the contrast of the crispy fried cracker with the fresh vegetable.
Use quality oil for frying and a good frying pan that does not need lots of oil.
I think 1-3 tbs of oil are enough for each fry. You can always add more if you wish.

Ingredients
- Carr’s table water crackers or matzo crackers
- Eggs
- Oil for frying
- Fruits, vegetables, herbs & spices for topping
Wash the crackers under running water in a way that they cover the whole crackers from both sides.
Wrap in a kitchen towel and wait till they get soft that you can fold them without breaking them.

Scramble 2-3 eggs in a plate and dip the ready moist crackers in the eggs till the crackers are totally covered with the eggs from both sides.
If you use Carr´s crackers, take two and put together after you dipping them into the eggs.
If using Matso crackers, cut to halves and fold once after dipping.
Heat a few tbs of oil in a frying pan and fry the crackers from both sides till light brown.
Take out of the pan and spread anything you wish on top.
Could be cheese, avocado, vegetables etc…
You can add pepper, salt, red paprika and herbs as you wish.
