Another recipe that is simple and can be combined or used as additional to other dishes.
In my childhood home the sauce was different, I decided to use red wine here and add extra nutmeg.
All the ingredients are super healthy and when you will combine them, a great aromatic waves will fill up your kitchen the second you’ll add the wine. (Not to mention the great sound)!
I use it mostly on top of rice but it goes great with baked potatoes, couscous etc…
100% vegan/vegetarian but works perfectly on top of a good steak.

Ingredients
- 10-15 shallot onions, whole peeled
- 10-15 cloves garlic, peeled
- 0.5-1 dl olive oil
- 3 dl red wine
- 3-4 rosemary stalks
- 3-4 thyme stalks
- 6-8 bay leaves
- Black pepper
- Pinch of nutmeg
- Salt

In a non sticky casserole, heat up the oil.
Add the onions and fry on medium heat till they get brown.
Spread spices and mix well.
Add rosemary, thyme & bay leaves and mix gently.
Add wine, bring to a boil, cover and cook for 20-25 min till soft.
You can add a bit wine in case of using a bigger casserole.
The wine should cover the onion half way.
Serve warm to the table.
