Freshly baked bread gives always the warm feeling of home but using a cast iron pot for baking, gives even better crust and great texture.
Coming back to work after the summer holiday left me with not much free time to cook or bake so I was looking forward to the coming weekend so I can hit the kitchen and prepare this recipe in the new Fiskars Norden cast iron 5l oval casserole we just got.
Just follow these steps and you will realize that your kitchen turns into 5 stars bakery.
This bread has a great mix of tastes of mix-nuts and citrus juices and a slight warning, you can easily get addicted.
The only sugar is the orange juice sugar.
To make one loaf of bread:
- 125g Rye flour
- 425g White flour
- 1 flat tbs Salt
- 3g Dry Yeast
- 60g Chopped mix-nuts
- 2dl Water
- 1.5dl Orange juice
- 4ts Olive oil
Mix flours, salt, yeast, and nuts in a blender.
Add liquids and mix in the blender on medium speed for 8 min.
Place the dough in an oiled bowl, sprinkle some flour and let it rest covered for an hour.
Heat the oven to 250 C and place the cast iron pot in the oven with the cover for an hour.
Meanwhile, knead the dough again into a loaf and let it rise till double.
Take the iron pot out of the oven, carefully, IT IS BURNING HOT!
Reduce the oven temperature to 230C.
Place the loaf in the pot, make cuts and bake covered for 30 min.
Take off the cover and bake for another 10 min to get the crust.
