Many of us spend these days more time at home because of the unusual virus situation.
One of the things that help us to go through this challenging time is cooking, baking and making our visual fantasies come true.
Here is a recipe for those of you who like using coconut milk and get a spicy after taste.
Please pay attention that the amount is for 5-6 people. You can reduce the amounts by half if you wish.
Stays well up to 2-3 days in the fridge and also possible to freeze and use again.

Serves 5-6 people
Use 28 cm frying pan with a lid
Ingredients
- 2 packs of chicken drum sticks (1.6kg)
- 1 tbs red paprika powder
- 1/2 tsp black pepper
- 1/2 tsp turmeric
- Oil for frying
- 1 big onion, cut to half and sliced
- 5-6 cloves garlic, sliced
- 1 finger fresh ginger, grinded
- 2 tbs yellow curry paste
- 2 cans of coconut milk
- 1 stick lemongrass, sliced
- Lemon zest from one lemon
Garnish with:
- handful fresh coriander, chopped
- 1 red chilli pepper, chopped
Instructions
Mix red paprika, black pepper and turmeric and rub/cover all the chicken drumsticks.
Hit 0.5dl oil on the frying pan and fry the chicken drum sticks from both sides till golden brown.
Put the fried drum sticks in a separate bowl and fry the onion is the oil that is left.
Add the garlic and ginger and fry for a couple of minutes.
Add curry paste and the coconut milk, stir and bring to a boil.
Add lemon zest and lemongrass and stir.
reduce the hit to medium and place the fried chicken drum sticks in the pan.
Cover and cook on a low hit for 25-30 min.
Garnish with fresh coriander and chilli pepper.
