Maritozzo, the sweet classic Italian bun

This year is the first year that I decided to prepare the Italian version of the sweet Finnish bun filled with cream(laskiaspulla) on Laskiainen, a traditional day of the year that we go sliding on the snow and right after eat the sweet bun with a hot drink.

I love traditions and try to follow as many as the free time allows me.

This recipe is different than the Finnish bun. The dough takes a bit longer time to raise, it has much more butter, more airy and some of the recipes brush the buns wit sugar water glaze.

The original bun is filled with whipped cream, I prepared two variations, one with whipped mascarpone cream and to the other I added marzipan slices(for those of you that still want to stick to the Finnish tradition).

          Ingredients for the dough (makes 24 buns)

  • 1kg white flour
  • 2dl sugar
  • 22gr dry yeast
  • Zest of 1 orange
  • Pinch of salt
  • 2.5dl water
  • 2.5dl milk in room temperature
  • 4 eggs
  • 2tbs honey
  • 220gr soft butter
  • 1 beaten egg to brush

  Ingredients for the sugar water for the glaze

  • 2.5dl water
  • 3dl sugar

Ingredients for the cream filling

  • 5dl cream
  • 7 tsp icing sugar
  • 2 tsp mascarpone cheese

Instructions

Mix flour, sugar, yeast, salt & orange zest in a mixer bawl.

Add water, milk, eggs, honey & butter.

Mix for 6 min in medium speed.

Cover and let it rest for 1.5-2 hours.

Create long buns of 75-80 gr each.

Place on a baking tray with baking paper, cover and let it rest for one hour.

Heat the oven to 175°C

Meanwhile, prepare the sugar water for the glaze.

Mix the sugar and the water in a small casserole and bring to a boil while mixing.

Stir till the sugar dissolves and cook for 6-7 min on low-medium heat.

Brush the buns and bake for 18-20 min, till golden brown.

Brush the buns with the sugar water just as they come out of the oven.

Let them cool down and then, make a cut in the middle from the top, almost all the way but in a way that it is still in one piece.

Whip the cream with the icing sugar till stiff and then mix in 2tbs of mascarpone cheese.

Fill the buns with a flat tool with the cream and decorate with icing sugar.

You can add in slices of marzipan as well.
