Classic Finnish potato flat bread

A classic Finnish bread that comes originally from south Karelia and was one of the main basic items in the local kitchen.
Simple & cheap to make which makes it magical and leaves you with a delicate taste.
There are different recipes with different amounts of ingredients according to your own taste.
It can be a total flat bread and it can be like a soft Pita bread version.
Pick up carefully the kind of potatoes you use to make the perfect puree.
If you want them rather flat, make small holes with a fork.
It goes best with butter or butter& egg mix on top.
A real delicate piece from the classic Finnish baking.

Ingredients
  • 6 dl potato puree
  • 4 dl barley flour
  • 1-2 dl white flour
  • 2 eggs
  • Pinch of salt

Mix flours and salt in a bowl.                                                                                                Prepare the potato puree and when still warm, add 1/3 to 1/2 of the amount of the flour mix.                                                                                                                                                     Mix well and let it cool down.
Add eggs and mix carefully.
Add slowly the rest of the flour until the dough id formed well to be solid.
Make balls and softly flatten them on a floured oven tray.
Bake for 10-15 on 250 degrees.
